Cheesy Crab Mini Tarts

Yield: about 40

5 egg roll wrappers
1 (8-ounce) package cream cheese, room temperature
1 cup freshly grated Parmesan
1/2 cup heavy whipping cream
1 egg, beaten
1 tablespoon Stonewall Kitchen’s Maple Chipotle Mustard or Rothchild’s Anna Mac’s Smokey Mustard or Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon hot pepper sauce, such as Tabasco
8 ounces crabmeat, canned or frozen
1/4 cup minced green onions
1/4 cup minced red bell pepper

Procedure:

1. Preheat oven to 350 degrees. Cut each egg roll wrapper into 9 squares. Press squares into a mini muffin cup, pressing them down to form a cup. Bake in middle of preheated oven until lightly browned, about 5 minutes.

2. In bowl, combine cream cheese and Parmesan. Stir until well combined. Add cream, egg, mustard, Worcestershire, hot pepper sauce; stir to combine. Add remaining ingredients; fold to combine.

3. Fill each egg roll cup with crab mixture. Spoon filling into egg roll cups. Bake about 15 minutes, or until piping hot and cooked through. Allow to rest 5 minutes before serving.

DIRECTIONS
In a medium-size mixing bowl, whisk together the flour, milk, egg and salt.
Heat a large frying pan or wok over medium high heat. When the pan is hot add a teaspoon of butter and lightly coat the surface of the pan with the melted butter.
Pour one quarter cup of the batter into the pan and tilt the pan with a circular motion so that the batter coats the surface in a smooth and even layer.
After two minutes, lift up an edge of the crepe with a spatula to see if it is browning. When the underside has begun to brown, flip the crepe and cook the other side until it is also brown; about 2 minutes.
Repeat steps 3 and 4 to cook the remaining crepes. Serve hot.

Oh come on. You’re just jealous of George.

Okay, drinks, appetizers, and crepes. Throw in a little fresh fruit, more drinks and you’ve got yourself a Merry Little Bliztmas. Besides, it’s brunch, the big food comes later from the caterer.

Merry Christmas from us lucky housewives of Orange County!
